Buttermilk Smoked Chicken with White BBQ Sauce

1 chicken buterflied 

3 tablespoons Keith Lorren Gourmet Poultry Seasoning

3 tablespoons Keith Lorren Seasoned Salt

2 1/2 teaspoons salt

3 tablespoons yellow mustard

3 tablespoons Garlic/shallot/oil puree

¼ cup butter milk

Black pepper to taste

Lemon zest/Lemon juice

Keith Lorren Scotch Bonnet Hot sauce

directions: massage seasoning into meat, allow to marinade over night


Keith's BBQ white sauce

¾ cup mayonnaise

2 tablespoons buttermilk

1         lemon juice

1 teaspoon horseradish mustard

1.5 tablespoon apple vinegar

1 tablespoon Garlic/shallot/oil puree

2 teaspoon horseradish

Dash Keith Lorren's Scotch bonnet

Fresh cracked Black pepper

Salt/ Keith Lorren's seasoned sea salt to taste


directions: mix well


Grill Setup:

The next day set up Grill with Coals. ignite coals and allow to ash over. Once ashed over spread coals evenly over grill and around a small water bath. add seasoned smoke ingredients (Oak, Hickory, Cinnamon sticks, shallots over coals and allow smoke to develop. 

3)Add chicken to grill over indirect heat and pour the remaining marinade from the marinating over chicken  Allow to smoke about 1.5 hours at 350 degrees

Move chicken over hot coals after smoking to char skin before serving

Serve Chicken with WHite BBQ sauce
